1 egg
1 tablespoon prepared yellow mustard
1 teaspoon garlic powder
1 teaspoon oregano
1/2 cup onion, chopped fine
1 1/4 to 1 1/2 pound lean ground beef
2 cups pork rinds, chopped fine

Preheat oven to 350 degrees. Stir together the egg, mustard, garlic powder, oregano and onion. Fold in the ground beef with your hands, mixing well. Fold in the pork rinds. Shape into meatballs and place in a 9 X 13" baking pan. Cover tightly with foil and bake 1 hour.

Mushroom sauce:
1 clove garlic, minced or 1/8 teaspoon garlic powder
1 slice of an onion, finely chopped
2 tablespoons butter
1 can mushrooms, undrained, finely chopped
1 cup chicken broth
3/4 cup heavy cream
1/8 teaspoon nutmeg
1/4 teaspoon pepper
4 ounces cream cheese

While meatballs are baking, saute the garlic and onion in the butter until translucent, but not browned. Stir in the remaining ingredients except the cream cheese. Bring to a boil, then turn the heat to low and simmer 2 minutes, stirring often. Stir in the cream cheese, cooking on low and stirring often until cheese is melted. Simmer 3 minutes more, stirring often.

When meatballs are finished baking, place them in the mushroom sauce and gently stir to coat.
