Man Eating Nothing But Potatoes for 2 Months - Yahoo! News

I loved TWO quotes from this one:

"Also, low-carb advocates are harsher on the potato than science allows them to be. Some potato varieties, prepared correctly, can be as healthy as the much-lauded whole grains." YEH.

And "For the record, Voigt told LiveScience his blood sugar level is in the mid-90s, ... " WHAT did he test just moments before? Last I heard, BG is fairly dynamic ...

Hello Linda :D, This is so typical of what we have to watch with carbs as we know all too well that Potato's is a good slow carb!!!
The problem is that potatoes have a high glycemic index, a measure of how quickly carbohydrates are absorbed into the bloodstream. Foods with a higher glycemic index - most notoriously, processed foods - are associated with weight gain, insulin resistance and diabetes.
As in chips where the oil that it get's cooked in will make the potato even longer GI properties so if I were to shovel snow then the fish N chips would be good to eat before I start shoveling. ;)

I love Potato's Lin but with other vegetables too. :eek:
