This recipe has been around for years & I've loved it for years. I just didn't realize until now how diabetic-friendly it is! Yea! It's from Heloise Cruse - the original Hints from Heloise lady.

8 ounces cream cheese, room temperature
1/2 cup mayonnaise
1 cup chopped stuffed green olives
2 tbsp. olive juice
1/2 cup chopped pecans
dash of pepper

1. Mash cheese with fork to soften a bit.

2. Add mayonnaise and blend until smooth.

3. Add olives, olive juice, pecans and pepper.

4. Mix well. Refrigerate.

5. Serve on crackers, thin toast with lettuce, or on fresh thinly sliced bread.

(or sit down & eat it with a spoon - that's what I do! heheh! :D)

Another great use for this spread . . . take wafer-thin slices of roast beef & make roll-ups. This is just the greatest filling ever!
