PEPPER STEAK
NOTE: You can buy 'Dixie Carb Counters Thick-It-Up' online at Netrition. If you are on a salt-restriced diet, you can substitute a Herb Ox Beef Flavored Sodium Free Bouillon Instant Packet for the bouillon cube and Bragg Liquid Aminos (available at Netrition) for the soy sauce.

2 lb. round steak
garlic powder
1/4 C. (4 Tbsp.) butter
1 small green pepper, cut in strips
1 small onion, chopped
1 can diced tomatoes
1 beef bouillon cube

1/4 C. water
1 pkt. Splenda
3 Tbsp. soy sauce
1/2 tsp. Thick-It-Up

Cut the meat in 2" X 1/4" strips. Sprinkle with garlic powder, brown in the butter.
Add onion, green pepper, tomatoes and bouillon cube. Cover and simmer 45 min.
In a small bowl, stir the water, soy sauce and sweetener together, then stir in the thickener. (Do not stir in thickener until just before adding to the meat mixture.) Add this to the meat mixture, cook and stir until thickened.
Serve over faux rice or faux mashed potatoes.
