I have experimented and made some realllllly lousy cheesecakes. Cheesecake should be moist, luscious, and flavorful ... So I went to the original Joy of Cooking, and adapted one of theirs:

Crust: 1 c almond flour
3 TBS butter, melted

Filling:
2 x 8 oz cream cheese, softened
3 eggs
2/3 c Zsweet (or erythritol)
1/2 t vanilla
dash salt
grated rind and juice of one Meyer Lemon

Melt butter in pie pan, mix in almond flour and press into pan. Beat eggs and cream cheese, sugar and flavorings together until well blended and pour into crust. Bake at 375 for 20 - 30 minutes.

Cool at room temp, until room temp.

Topping: Mix together 1.5 c sour cream, 2 TBS erythritol, 1/4 tsp vanilla, dash salt. Spread over top and bake at 425 for 5 minutes to "glaze" top.

This is so good. And I REALLY recommend Meyer lemons! They probably have more sugar, but they also have a perfume-y flavor that goes well in this cheesecake ... and really, it is a drop in a bucket!

But he cannot say why, exactly.

I love cheesecake but my husband isn't crazy over it.
