The vegetable that eats like a fruit. I think rhubarb is going to be a new staple for me.. one of those things you just don't normally think about. The easiest rhubarb is what I call rhubarb pudding.
Trim and cut rhubarb in 1/2 inch slices. Throw it in a saucepan with a little water and sweetener(s) of your choice. Boil/simmer stirring occasionally until the rhubarb completely falls apart. If you have a low carb thickener you can use it (I used Xanthan Gum) - if not using a thickener go real easy on the water. I won't give any measurements cuz it's not a measuring type of thing - some like it very sweet but I know at least one person who uses no sweetener at all. I just taste the stuff from time to time while cooking and adjust the sweet to my taste. I used enough water to barely cover the rhubarb but you can also use as little as 1/4 cup of water. Let cool enough so you don't burn your tongue.
Whip up some heavy whipping cream with a little vanilla and a little sweetener to put on top and there you go!
The "Rhubarb Pudding" can also be used as a sauce.. maybe on some CrabSmart Vanilla Ice Cream.
Carb count depends on the sweetener and thickener.. Rhubarb itself is 4 carbs per 2/3 C and 2 carbs are fiber so 2 NET carbs.
