Hi. I'm wondering how safe it is to eat various sauces: tomato, barbecue, marsala, francese... The meat itself is okay to eat, but I would think the sauce that's on it could make a difference in blood sugar levels ???

Well, it depends on the individual ingredients, of course. Tomatoes can be tricky. White sauces typically have white flour, and if commercially made, may have sugar or even HFCS.

The New Atkins book has a chapter of sauce recipes, modified to lower the carb count. Many are delicious and are French "mother" sauces that you might further modify or vary to suit your taste.
