Spaghetti Squash Alfredo

1 spaghetti squash, cooked, scraped out & seeds removed
1 or 2 large chicken breasts, diced bite-size
8 oz. fresh mushrooms, sliced
handful of almond meal mixed with shredded parmesan
1 jar low-carb alfredo sauce, or make your own by melting these ingredients together:
1 stick butter
1 cup cream
1 cup water
1/4 cup shredded parmesan
1/4 cup mozzarella
1/4 cup cream cheese
1 tbsp. minced garlic
Brown the diced chicken in a little butter & add the mushrooms when chicken is about half cooked.

Combine squash, chicken, mushrooms & alfredo sauce, toss gently to coat with sauce.

Spoon into a baking dish & top with almond/parmesan mixture.

Bake at 350° 30-40 minutes, or until topping begins to brown.

One of my favorite dishes is sliced yellow squash with bread crumbs and velveeta cheese on top, then baked to perfection. Yummmm!

I have about six of those little yellow beauties lying on the counter today - I asked DH to get 'em while I went looking for something else in the store the other day, and when I unloaded at home, he'd gotten a whole bagful! lol! We love those! I guess we just love squash period - summer & winter varieties both. And it's so good for what ails us! heheh! :D
Spaghetti squash is also great with pesto.
Shanny, I believe even an old shoe would taste great in that sauce, and from now on I'll be throwing everything into it except an old shoe. Thanks for posting.
Yum! I must make this really soon. My family loves spaghetti squash and alfredo!
