Spaghetti Squash Casserole

This is the Fat Dog Casserole, made with spaghetti squash instead of pasta, and with diced tomatoes instead of tomato sauce. We liked it a lot - more texture & flavor.

Spaghetti Squash Casserole

1 tbsp butter or margarine
1/2 onion, coarsely chopped
1 tbsp. of diced jalapenos
1 tbsp. minced garlic
6 or 8 hot dogs, cut in half-inch slices or smaller
1 3-oz. pkg. cream cheese
1/2 cup sour cream
1 can diced tomatoes, drained
pulp from 1/2 large spaghetti squash, cooked, seeded, scooped out
1/2 cup or more grated cheddar cheese

Sauté onion, jalapenos, garlic & hot dogs in butter. Add remaining ingredients & heat until melted & blended together. Garnish with more grated cheese when serving.

This sounds yummy! I have been wanting to try spaghetti squash in something. What is the best way to cook the squash, oven or microwave?
I microwave it, because it's fast, plus I don't have the strength anymore to hack it in half to bake in the convention oven. Just stab through the rind in several places, and nuke it for about 15 minutes. Then I let it set & cool down a little before I start cutting into it to scrap out the seeds. If you haven't done one before, you'll be able to recognize the seeds & their "stuff" - looks like a pumpkin's. Then the pulp of the squash pulls away easily with a fork. And it's really good with just butter/salt/pepper too!
When I need a quick meal Spaghetti squash is ideal. Simply cut squash in half lenght wise. Scoop out seeds. Place cut side down in a large microwaveable bowl and add about an inch of water. Cover with plastc wrap and nuke on high for 8 or 9 minutes. When cooked rake it with a fork and viola you have healthy "spaghetti". Top with some low sodium spaghetti sauce (or make your own) and you have a quick meal.
