This is a VERY simple recipe, probably too simple to be posting. But for folks like me who are old enough to have a parent or grandparent who use to make stewed tomatoes on the sweet side, with bread in it, might find it to be a treat. I'm new at this diabetic stuff, so am unsure about what kind of low carb bread to use, so I am using Healthy Life 100% whole wheat bread at 5 net carbs per slice. By my calculations, this has 6.5 grams Net Carbs per serving.

4 servings

1 (approx. 16 oz.) can whole tomatoes
1 1/2 slices Healthy Life bread
1/4 cup chopped onion
1/4 cup chopped green pepper
2 tablespoons butter
1/4 teaspoon salt
dash pepper
3 packets Splenda

Cut each tomato into 4 pieces, set aside.
Tear the slice of bread into 6 pieces, the half slice into 3 pieces, set aside.
Saute the onion and green pepper in butter. Stir in the tomatoes, salt and pepper. Simmer over very low heat for 30 minutes.

Stir in the Splenda. Gently stir in the bread and simmer 2 minutes longer.
