Many fave dishes like meatloaf usually require 2 eggs, perhaps milk, but I cannot handle any kind of dairy.

Learned how to make a very healthy substitute.

Mix one heaping tablespoon of chia seeds and three water [3:1] equals about one egg. Nuke 30 seconds or until hot, stir, and set aside. In a short while it will gel and binds things like meatloaf perfectly.

And chia seeds have no taste to the loaf is spice friendly.
