I'm not much of a jam or jelly person, but this morning I was having a slice of almond-flaxseed bread with PB and it cried out for jelly. Having none I did this:
1 large strawberry, cut up
6 fresh blackberries
1/8 t Splenda
A dash of cinnamon
Toss everything in a bowl and nuke it for about 30 seconds. Mash the heated fruit with a fork until it's well blended. It will be liquidy. Put the bowl in the fridge for 30 minute to an hour; the natural pectin in the fruit will make it thicken.
This tiny bit of fruit made enough fruit spread for about three days. Nearly no carbs. Yum - my PB&J yen was satisfied.
You can do this with just about any fruit, adjust the sweetener to your own taste, and augment it with any herbs or spices you prefer.
