Sometimes we get so focused on big challenges and goals that we forget to celebrate the little wins. Those little baby steps that give a little win can add up to big wins over time.
One of my challenges is my love of food, especially really good food. Since my diagnosis, I have often felt deprived because I truly miss some of the foods I used to love. When my kids were young I cooked a lot, but now that they are grown and gone, it has really just become a chore and I just make simple things that can be made REALLY fast.
This afternoon, I was sitting here craving a bacon cheeseburger - not just any bacon cheeseburger, but like the best one ever. I thought of a few restaurants where I could go to get one, but I knew it would open me up to some other cravings, so decided to set out to make it myself.
First, I fried up some high quality bacon, leaving the grease in the pan, then I went to work on the ground sirloin hamburger patty, including all my favorite spices, that have been neglected far too long. When it was nearly ready, I added the bacon on top, and covered it with a slice of baby swiss cheese from the deli. I put it all in a huge fresh (crisp) lettuce leaf, along with a slice of fresh onion, and a bit of mayonnaise and mustard. I set it up on a nice plate, with a cloth napkin and poured a glass of unsweet tea.
OH MY GOSH! :vs_OMG:
It was beyond yummy, and in no way did I feel deprived. Yes, it is likely more calories than I should have in one sitting, but the carbs were within reason, and it didn't jump my blood sugar out of range. More importantly, I actually enjoyed the process of cooking for myself and taking the time to make it enjoyable.
