This recipe is from The Atkins Essentials book:

I thought it was good, slightly sweet, mellow flavor, custard consistency

Heat oven to 325 need 4 -- 6oz custard cups in a large pan
(I used an 8x8 square glass pan, worked very well with my custard cups)

Vanilla Flan

1cup heavy cream
2/3 c water
4 tble granular sweetener

in small saucepan, bring these ingredients to a simmer,
remove from heat and stir in:

1 teaspoon vanilla

Let sit for 15 min.

Beat 2 eggs together, whisk in part of the warm mixture,
then combine with rest of mixture

Pour thru strainer if needed, and fill each cup with about 1/2 c of the mixture. Place cups in large pan and fill half full with boiling water.
Cover with aluminum foil and bake for 40 min. It will be slightly shimmery when removed from oven (will move a little)

Let sit for 15 min after removing from oven.
Cover each dish in saran wrap and cool for 2 hours.

2.5 grams of carbs, 2.5 g net carbs
4 g protein, 0g fiber, 20 g fat, calories 265
