Well, I can particpate tonight (sometimes it's just grazing/leftovers). Dinner was pork chops with a garlic butter sauce (half a stick of butter, "Baby Bella" mushrooms, minced garlic, a little chicken stock, and salt/pepper/paprika) and some leftover string beans from a previous dinner. Enough left for another meal over the weekend.

Ate out last night. Had VooDoo Shrimp and Grits. The shrimp, tail on, were stuffed in jalapeños, tail out, with cream cheese, wrapped in bacon, with a chili glaze. They sat on a bed of grits mixed with cream style corn. The shrimp were good, but kind of messy if you tried to make it two bites. The grits sure tasted good but i only had about four bites it. BH can never finish her eat out meals, so I got a couple of chicken tenders she wasn't going to eat. Not keto, but it was forgiving.

Sounds like a celebration that didn’t make you pay for it the next morning (94). Good! The food sounds pretty good, too. You didn't mention nephew-in-law though... (y)(n)

Actually he's not new, but just getting to meet him. He married our niece last May in NW Arkansas where they both were living. Small wedding due to Covid so only immediate family attended. They just haven't had time off together to come down to visit until now. He just graduated med school this past fall, a radiologist, and she works in radiography. I know where to go for x-rays now.

My BH cooks the loins in the crock pot, I don't know what seasonings she puts in other than butter. I do know that it is very tender and melt in your mouth good.

We made a great big pot of vegetable beef soup that will last a few days. We've had ice/sleet for a couple of days so it's good to have something hot.
I did the same thing a couple of weeks ago. Gonna have to do it again, in a bigger pot. I've still got a lot of my keto chili in the freezer.

We were invited to recent acquaintance's home for dinner. They've been with us to eat at restaurants and have some idea that I don't eat like they do. They said there would be ham, sides and a low cal dessert. I didn't trust the sides except deviled eggs and a little marinated salad. The ham should have been safe. I thought it tasted a little sweet (I'm more sensitive to sweet than people who eat it all the time). As I was cutting into it the host said "I injected it with maple syrup". Yikes! Even before diabetes I didn't like sweet with meat.:eek: The low cal dessert was chocolate cake with sweetened strawberries! I kept thinking of @itissteve's motto--I can, but I'd rather not.

Been cooking all morning. Fixed up some red beans and rice. The beans are pretty spicy cajun style. Won't be able to eat until tomorrow, hoping to retrograde the starch in both. The rice I've done before, but not the red beans. I've had good luck with Anasazi beans, so hoping the red beans do good too. I'm keeping them separate, but may have made way too much rice, the beans I could freeze but I think the rice turns mushy.

Also made a big pot of keto chili, because its about that time of year again. Going to put it in the freezer to save it for a camping trip next month.

I've found that black soybeans have very few net grams of carbs, so we've tossed those into some dishes where beans are not front and center (like our keto chili recipe). They're spendy in cans, though, so I think the next ones we buy will be dried. Easy enough to reconstitute and cook and I like the texture more than canned beans.

I'm pretty close to Texas so IF its got beans in it, it ain't chili.
