Spaghetti squash and turkey breakfast sausage (with added bacon grease) and sautéed onions.
I haven't done a spaghetti squash casserole and find it very good. I liked the al dante condition of the squash "noodles". It was a success.

(Other than bacon grease, I added just a sprinkling of salt and a bit of herb seasoning - the sausage was already seasoned.)

BH made something like that the other day. Cut squash in half, cleaned out the core and filled with sausage, several cheeses, and a dab of alfredo sauce, then baked it in the oven. it was nummm-licious. First time I ever had spaghetti on the half shell.

Pot Roast , with Broccoli and a salad.

I have had eggplant similar to what is mentioned above. Half it and scoop out inside , chop it up and saute with ground beef and some tomatoes and seasoning then put it back in the shell cover with cheese and bake it .

I'll be having a "to go" plate of fried catfish that BH brought home for me last night. The fam all went out to eat for son's and son-in-law's birthday and I was working. I'll eat the fish, maybe one hush puppy, a bite or two of tomato relish, and a slice of onion but will pass on the fries, beans, slaw. Sounding gooder and gooder as I am breaking a 26 hour fast.

Did an interesting experiment last night - just prior to my final meal of the day I was testing at 85. So I though great time to try the experiment - all I had for supper was 2 boneless chicken breasts with a little bit of peanut topping. After 2 hours I went from 85 to 105. Still good considering I hadn't taken any humulog (fast acting insulin) like I normally do before a meal. So I then decided to see what a glass of red wine would do - I drank and enjoyed it and almost 30 minutes later tested again where I went from 105 to 245.
Gave myself a few units of humulog to get it back down before going to bed. Now the interesting thing is - when I eat a little bit more carbs with my meals along with a shot - when I have red wine- my BGs will drop more than usual - but with no or very little insulin in my system (no shot) it does the exact opposite.
Moral of the story - chicken negligible affect while a dry red wine (no insulin) sharp fast increase.
I occasionally do this from time to time with usually the same results - doesn't appear that my body metabolism hasn't changed all that much over the past few years.

My wife wanted take out tonight, so I asked for donair meat. yep, donair meat, no pita, no white sauce, just donair meat LOL I dressed it with hot sauce and dijon.

I think the meat is laced with bread crumbs although I heard it depends on which restaurant you get it from. I'll have to... er.... do my homework on this one.

I put a frozen (precooked) sausage patty at the bottom of each opening of a jumbo muffin tin. On top of that I add a mix of peppers and onion. On top of that, I cracked one egg over each. Salt & Pepper. I put it in the toaster oven until it looked close to done, then I added some pepper-jack cheese on top of each and put it back in until the cheese melted.

That sounds good, Cricket! But I like bell peppers more than they like me, so I'd find a substitute. Maybe just more onion; maybe nopales or string beans (they have kind of the same texture and color but none of the digestive unhappiness for me).

Tonight's dinner for my wife and me was chicken breast with a low-carb satay sauce and green beans on the side. It's feeling good to cook again.

You have got me thinking about a rotisserie chicken from Wal-Mart, those things are terrific. But, instead I may get some chicken quarters and fry them.

Last night I had a couple of bowls of pinto beans, I use a wee small pot, and I make small batches of them. That has been working out great.

Had a piece of thin crust pizza - extra cheese, lots of meat. I was still hungry after I ate it. I was hungry all day yesterday - I credit that to fasting on the weekend while doing heavy labor with late-spring/early summer landscaping. I'm still hungry actually but I don't need to eat as my BGs are fine and I'm at my ideal weight of 185 pounds. It's funny at times I'm more hungry when I eat than when I fast.

Squawkx, you might check out the thread about retrograding the starch in your beans. It starts out talking about potatoes but does get into beans I have had success with both, more so with potatoes. I've even had some luck with rice. There are a few other threads about it here on the forum and a lot on the www.
