Reading through some of the posts I saw folks mentioning pork rinds, or skins as we used to call them, and as soon as I realized they could fit into my lifestyle, I got out to the store just a few minutes ago and bought half a dozen bags so I am snackin' on some skins! Thanks y'all!:angel2:

Decided to mix it up this afternoon. I was looking for pork rinds but couldn't find any so I went with plain Beef Jerky It's marketed as a smart snack - 9 g of protein, 60 Calories, 0.5 g of fat and 3 g of carbs. That's for a 1/4 of the package not the whole thing. It also has 18% sodium and yes it does taste a bit salty - I don't salt my food so I find it salty.
It will be interesting to see what affect it will have on my BGS. It shouldn't have any affect but we will see ...... I'm starting to get tired of munching on nuts all the time.

You might need that extra salt when you start eating more keto. Eliminating a lot of processed foods also eliminates a lot of salt from your diet. Have you just started eating the mixed nuts? May need to see if your nightly calf cramps are better with the extra salt you are getting from them.

I'm snacking on cheese on 4 to 6 triscuit crackers. Should I replace this with nuts?
In most cases, yes, if you can keep the quantity of nuts you eat to a handful (an ounce) or so.

Six Triscuits have about 17 net grams of carbohydrates; a handful of just about any nuts would come in below 9 net grams (and could be as low as 2-3 grams). Cheese (unless it has sweet stuff in it or on it) doesn't have carbs to speak of. The trick is to keep the amount of nuts eaten to a handful. That's tough for me sometimes. :surprise:

Deviled egg with brown n’ serve sausage link
Fisher honey roasted peanuts
Stick of string cheese & 2 turkey deli slices

I had an oatmeal raisin cookie this morning - my BGs were at 120. Curious to see how much my BG will increase in the next hour as the result of the cookie.

Since changing my Basal insulin there has been some subtle differences in my BG behavior after eating. On my old insulin eating an oatmeal raisin cookie would significantly impact my BG levels. Curious to see if this will still be the case.

Fun and games! I haven't had an oatmeal raisin cookie in years because of the BG issue from days gone by. Hopefully it doesn;t have as great of an impact now. It was tasty!

Did not turn out well - just reinforcement that this still has negative impacts - an hour later my BGs shot up from 120 to 200 - oops - I won't be doing that again ...

My latest is a small half-oz pkg of Whisps (parmesan crackers) with some labneh as spread/dip. 2 carbs.
