What's for dinner at your house?

Decisions, decisions!!

I roasted a chicken yesterday & was planning to do tetrazzini for today's menu (Dreamfields linguini, of course). Then I ran onto a package of beautiful bottom round steak when we did our shopping. It was reduced & I'm a sucker for a bargain. And I didn't have the heart to put it in the freezer, so now it's in the oven piled high with chopped, onion/celery/green pepper & tomatoes. Yep - Swiss steak.

I guess I'll leave the decision to my better half - he's the one who's always hungry anyhow. Found another package of meat reduced too . . . country style pork ribs. So I'll make a batch of sauce & put those in the oven too - either today or tomorrow. Nice to get a lotta cookin' done on the weekend - saves time during the week.

So, my diabetic friends.

I made a great beef soup yesterday. Lean beef, lots of carb friendly veggies, a little corn and a few red potatoes. It was so good I really ate what I thought was too much of it, but my blood sugar didnt suffer for it at all. I will have to keep that in mind for the next cold snap we have here!
We fixed the country-style pork ribs last night, only instead of doing a bbq sauce for them, I just browned them in the skillet, dumped a bag of sauerkraut on top & baked 'em for a couple hours. They were fork-tender and delicious! I guess we'll have the leftovers tonight! heheh!

I just had a bologna sandwich for lunch (well, half a sandwich - one slice bread/one slice bologna). It bumped me about 25 points, but it sure was good! :bump2:
omg that sounds good...come to think of it..I have a jar of sauerkraut in the pantry...hmmm...I might have to try that!
I do this same trick with raw bratwurst . . . browning the links, dumping on sauerkraut & bake until brats are done.

We do love our sauerkraut over here. One of our family jokes is that years ago DH was reading the label after I had opened a can of it, and it sez a serving size is 2 tablespoons! WHAT?! We couldn't believe our eyes . . . one can feeds only two of us, which is about a cupful each! ;)

I had a roast beef sandwich for dinner with a serving of corn chips-I amuse myself counting out the right amount of chips. I want to make sure I don't cheat myself! Shanny, you can come and cook for me! I can cook scrambled eggs and that is about it. :eek:
Well as you can see, my cookin' ain't fancy . . . two ingredients & one skillet! heheh! :D
