First big mess of lettuce from the garden! Nothing better than wilted lettuce - loaded with bacon & onion. Everyone who has a favorite method - be sure to post it . . . here's how I do mine:
Big bowl of torn lettuce leaves -
my bowl is about gallon size
diced fresh scallions or onion of choice
several strips of bacon, fried crisp & crumbled (
save the bacon grease)
1 beaten egg
2 tbsp. red wine vinegar
2 or 3 tbsp. erythritol or sweetener of your choice
salt & pepper to taste
about 1/3 cup of hot bacon grease
Combine the lettuce, onion & bacon bits; set aside.
Combine the egg with vinegar, sweetener, salt & pepper; blend well.
(If you're familiar with the technique for making hollandaise or mayonnaise, this is the next step.)
While whisking the egg mixture, slowly pour in the hot bacon grease & continue to whisk while the dressing thickens. Immediately pour hot dressing over lettuce & toss it around to coat evenly.
Now everyone tell your own favorite! Yummers!
(my recipe can be made without the egg . . . I just do that because it makes a thicker dressing that coats the lettuce better.
To make the dressing without the egg, just mix the vinegar, sweetener, salt & pepper with the bacon grease and immediately pour the hot mixture over the greens.
