I recently discovered Yacon root syrup. Apparently it is extremely low GI and suitable for diabetics. Some internet sites also say it is beneficial for weightloss. Would love to hear from anyone here who tried it. Thx!
Haven't tried it myself, but it appears to be 50% fructose sachirides (sp) you will have to contend with how much frustose you want your liver to handle on a daily basis. I myself will look into this stuff, maybe good for the occasional baked good or on LC pancakes.
Since it is high in fructose it won't show up on your bg meter but has to be cleared by the liver. This can make your insulin resistance worse. I am not sure I am willing to do that when there are so many alternative sweetners out there that work like stevia and erythitol.
