Just made this yummy sauce for cauliflower & brocoli.

3 cups shredded cheddar cheese
1 1/2 cups mix Parmesan, Asiago & Romano shredded
4 cups 10% cream +
2 tbsp flour - white
2 tbsp butter
Salt & pepper, dash of cayenne, chives

In medium sauce pan on medium high - do not burn
Melt butter, stir in flour, wisk for a min.
Slowly add cream while stirring
Keep stirring until thickened to desired consistency
Add seasoning & stir
Add cheese a bit at a time until melted & stir

Nanlou - what was your BG reading 1hr and 2hrpp with this recipe? (I'd also drop the flour - unnecessary carbs really) If one used heavy whipping cream, the flour would not be needed to thicken.

10% cream is equivalent to half & half, which contains too much milk for most of us. Swap it out for heavy whipping cream (HWC) and omit the flour - and make sure you grate your own cheese; that pre-grated bagged stuff contains potato starch to keep it from clumping. THEN you'll have a yummy low-carb cheese sauce.
