1 medium size head of cauliflower (approx 30g carb)
2 tablespoons of olive oil (no carb)
garlic salt (no carb)
Mrs. Dash seasoning (no carb)

Cut cauliflower into bite sized florets and place in a large mixing bowl. sprinkle liberally with garlic salt and Mrs Dash. Drizzle over 2 tbsp of olive oil and mix well to coat. Place on a foil covered cookie sheet and spread out evenly. Roast at about 435 degrees stirring them around every so often until they get a nice golden brown.

These are fabulous! I am so addicted to cauliflower this way. The only bad thing about it is that its hard to stop eating it until its all gone.
