Just run across this recipe in Happiness magazine. You know that little magazine you pick up at your local drug store. I love zucchini and believe these would be tasty. Simple and easy to make, I'm sure the 1/3 cup Bisquick could be substituted with your favorite "flour" plus another type of oil instead of vegetable.

2 cups zucchini, grated
1/3 cup Bisquick
1/4 cup parmesan cheese, grated
2 eggs, beaten

Mix ingredients together; blending well. Fry zucchini cakes in hot skillet greased with vegetable oil by using two tablespoons batter for each cake. Brown on both sides, Makes approximately 12 zucchini cakes.

That looks really good, too... maybe almond flour instead of regular flour.
